Quinoa, Kale & Sweet Potato Bowl with Peanut Sauce

  • 1 cup cooked quinoa
  • 1 sweet potato cooked, peeled and cut into 1 inch cubes
  • 1/2 bunch kale, cut into bit sized pieces
  • 1/2 to 1 cup other julienne cut veggies - bell pepper, carrot, broccoli, etc. - raw or steamed for 2 minutes
  • 2 tbsp peanut butter
  • 1 tbsp lime juice
  • 1 tbsp coconut aminos
  • 1 clove garlic, minced
  • 1-2 tbsp water
  • 1 tbsp chopped scallions
  1. To prepare the peanut sauce, mix peanut butter, lime juice, coconut aminos, water, and minced garlic into a small bowl and mix until creamy.  If too thick, add 1 tbsp of water at a time until you get the right consistency where it can be drizzled as a sauce.

    Place cooked quinoa in a bowl.  Top with cooked sweet potato and raw or lightly steamed other vegetables.  Drizzle peanut sauce on top.  Garnish with chopped scallions and enjoy.

    I recommend organic quinoa and vegetables for this recipe.  Grilled organic chicken can be added if desired.
